LLCC Culinary Institute offers food, wine and beer classes

SPRINGFIELD- Lincoln Land Community College’s Culinary Institute has announced its schedule of food and wine classes, in addition to special dinners for spring 2013.  New classes being featured this spring include Irish baking, Illinois wine and cheese, wine and chocolate, restaurant start-up operations, beer brewing, baking class/cooking class and tea, Easter appetizers, ceviche and many more.

Instruction is provided by culinary, nutrition and business experts in Springfield and surrounding areas.  The non-credit classes are offered evenings and weekends in conjunction with the Community Learning department and will be held in the Workforce Careers Center at the Springfield campus, 5250 Shepherd Road.

Registration is open now for the following classes:

Cooking Classes – Classes inspire and challenge the beginner to the most advanced cook.  The chef demonstrates techniques and students are placed into teams for preparation of items.  Classes include basic knife skills, tapas, recipe remix, ceviche, Easter appetizers, meatless Mondays and more.  Cost per class ranges from $49-$79.

Wine Classes – These classes are offered in partnership with the Illinois Grape Growers and Vintners Association. Classes include wine and chocolate, Illinois wine and cheese, and wine sensory experience. Participants must be 21 to register. Cost per class ranges from $49-$59.

Kitchen Boot Camp – Chef Denise Perry will instruct participants in basic knife skills, stocks and sauces, and techniques of cooking in this three-class series.  Cost for the series is $155.

Baking Boot Camp – Pastry Chef Terri Branham will instruct participants on yeast breads and rolls, pastry dough and cakes, pies and tarts, and cookies and brownies in this four-class series. Cost for the series is $200.

Desserts and Baking – Participants learn the basics of artisan breads, Irish baking, tarts, gluten-free baking and dessert table.  Cost per class ranges from $49-$59.

Young Chefs – Future chefs currently in grades 4 through 8 learn fundamental kitchen skills focusing on measuring and working cleanly and safely in the kitchen, while exploring new foods geared for their age group.  Classes include cupcakes/cake pops, knife skills, Mexican fiesta, after school snacks, breads and baking.  Classes meet Saturday afternoons and cost per class is $29.

Mother/Daughter Cooking and Baking Classes and Tea – LLCC’s Bistro Verde will be transformed into a traditional High Tea Room during this class.  Participants will help prepare pastries in the baking class or savory foods in the cooking class prior to the tea. Youth must be ages 8-17. Cost is $39 per person.

Special Culinary Institute Workshops – Learn the fundamentals of beer brewing, the art of jams and jellies, and food preservation in these special workshops.  Workshops range in cost from $59-$109.

 Eating for Health Series – These classes are being held in collaboration with the Simmons Cancer Institute and are designed for anyone seeking a healthier approach to eating.  Classes include vegetarian, antioxidant foods and refined sugars. Cost per class is $25.

Starting/Expanding Your Food Business – Learn the basics about developing and running a successful restaurant business and/or a successful catering business. Cost per class is $69 or enroll in both for $129.

Food Service Sanitation Classes – Individuals in the food industry can become certified by both the Illinois Department of Public Health and the National Restaurant Association ServSafe or renew their food service sanitation manager’s certification.

Bistro Verde Dinners – Dinners are multi-course dining experiences, not hands-on classes. Chefs offer remarks on the menu selection and dinners include wine, with the exception of the beer dinner. Dinner themes include Mardi Gras/Cajun, seafood, gluten-free, Earth Day and beer. Cost per dinner is $59 and payment is due at time of reservation.
